Adapted from one of Portland’s most beloved restaurants, this recipe combines the earthiness of ground almonds with the subtle kick of cannabis for a truly unique and delicious dessert. Chocolate Canna-Almond Cake (Serves 8-10)
Ingredients:
– 8 ounces of Spanish Marcona almonds
– 1 cup of sugar
– 4 large eggs, at room temperature
– 1/4 cup of all-purpose flour
– 1/4 cup of canna-canola oil
– 1/4 cup of buttermilk
– 2 teaspoons of orange zest
– A pinch of clove, cinnamon, and nutmeg
Syrup:
– 1 cup of brandy
– 1/2 cup of sugar
Ganache:
– 8 ounces of bittersweet chocolate, grated
– 4 ounces of heavy cream
Directions:
1. Preheat your oven to 340 degrees. Cut a piece of parchment paper to fit the bottom of a 9-inch cake pan.
2. In a food processor, grind the almonds and sugar into a fine flour, being careful not to overheat or turn it into almond butter.
3. In a separate bowl, whip the eggs until they are light and pale. Mix in the canna-oil and buttermilk. Add half of the flour mixture, followed by half of the oil mixture, then the remaining flour and oil. Stir in the orange zest and spices. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
4. While the cake is still warm, prepare the syrup by heating the brandy in a saucepan and adding the sugar until it is completely dissolved. Pour the syrup over the cake, using the back of a spoon to help it absorb into the cake.
5. To make the ganache, place the grated chocolate in a bowl. In a separate saucepan, heat the cream until it is simmering. Slowly pour the cream over the chocolate, stirring until it is completely melted. If the chocolate doesn’t melt all the way, you can gently place the bowl over a pot of simmering water and continue to stir until smooth.
6. Once the cake has cooled, cover it with the ganache and allow it to set before serving.
